A caloric surplus will only be stored in fat cells if not used. When working out, most of this surplus was used to build muscle. Sure, there's a little fat in the mix, but the ratio is skewed in favor of muscle mass!

I'm going to try your low-cal alfredo tonight. I've been looking for a way to do that for a while now. I would not have thought of using cottage cheese and cornstarch in place of the roux. Major calorie reduction. Hope it's good!

I'm trying to push up my weight but some body fat comes with it. I have been able to push up my caloric intake and not gain as much fat as in the past. It's tricky. I believe you have been eating more than me. If I ate 3400 calories a day my gains would be mostly fat. I think I'm a lot older than you...

I know you said you did double portions, but I'm going to try single. I figure I normally salt my chicken and broccoli, so a little big of alfredo will be a treat. :)

I just put it in the milk when everything was cold before I blended it. Came out perfect. Really good! And a single serving (1/4 of the recipe) was plenty for me. It was a sweet change from the ordinary for me. Now to find a low-cal curry! :)
