Diario de crabby Kat, 28 mar. 13

Got up early this morning, put a slow cooker chickpea and lentil stew together & in the crockpot, did dishes,etc. My monthly medication shipment came in time for me to make it to Silver Sneakers (yes!). The house smells wonderful.

I made a good lunch using some of my Blazin' Hot Volcano Seasoning, ground turkey breast,, masa, & liquid egg; yummy! The large Fuji apple was the perfect accompaniment.

My foot is aching, still tired, & I ate snacks galore. One bite at a time. Most of the afternoon. Sigh! I recorded it as well as my dinner yet to come. Unless I get up & dance around the house, I'd better not have my home made bread with the stew. I'll do my best to avoid the See's chocolates my partner brought home; I already had a serving of Theo dark chocolate with toasted coconut. :o)

My partner wants the whole Easter dinner deal; I've found recipes for pineapple glaze for the ham, lightened up scalloped potatoes, and a light bread pudding for dessert. Then there will be a relish tray and lots of veggies. I'll buy some rolls I won't eat, so my partner will have a place to put butter; at least we have the good Kerrygold butter!

I should call my doctor about my foot. I don't want to miss Zumba tomorrow ; how crazy is that? At least I see my physical therapist after class tomorrow, maybe she'll talk some sense into me!

I love your craziness! Keeping up with you is lots of fun. I have the best scalloped potato recipe IN THE WORLD.. I think it is an Epicurion (sp) magazine recipe. Just Potatoes, cream and butter but OMG. I made 2 batches for Christmas one year for company (8 people) with steak tenderloin and they ate all of both batches. Dang now I am missing taters. :( Hope your Easter is perfect!

Found it: Epicurean.com - Classic Potato Gratin from Yummy Potatoes by Marlena Spieler. There is a cute story with the recipe too. Let me know what you think. I guess this isn't scalloped though because there is no cheese but trust me you won't miss it. Only thing I remember is making 2 batches took up so much heat in my over that it took the beef WAY longer to cook.

I picked up a leg of lamb this eve for our Easter dinner. Never cooked one in my life so this will definitely be an adventure. Triumph or Pizza hut? Tune in one Monday :-)
