Anyone have any good recipe ideas for salmon? I tried to make it tonight in the oven and I wasn’t all that impressed. I just used lemon, dill, salt and pepper. It had way too much lemon and was disappointing for me and my daughter who are on a pescatarian diet for Lent right now. I ask about salmon because I bought a large package of frozen salmon filets.

I season mine liberally with Colorado Spice Sweet Salmon Herb Rub (my absolute favorite salmon seasoning) and rub it in well with a little olive oil, then bake it at 425° for about 11 minutes (should be 10 minutes for every inch of thickness at thickest part). Then squeeze lemon juice over it when I take it out of the oven and let sit for 5 minutes before serving. Comes out perfect every time. Good luck and enjoy!
