Maybe you need to broil at a high temp instead of baking? Sorta use direct heat to crisp? Did you coat them in any oil? that will make a difference too.

I slice mine into thick chips with a mandoline before shaking in a bag of avocado oil and seasonings, then broil at 500 degrees for about 10 min each side. I've heard of people twice baking with a flash freeze in between to get that crisp texture, hence what you get when you bake frozen fries in a supermarket, but that's more work than I care to do. Otherwise, I would invest in an air fryer.

Mine are not perfect, but here's what I've learned. I use air fryer. First, soaking for ten minutes in cold water does help, and you need to dry them off. I do a light mist of grapeseed oil and then I season. You have to space them and you have to turn them. Depending on the size, 400 for 15-20 minutes.

My mom has always fried them in a pan with oil. They don't turn out perfect but (if you don't have an air frier) they are crispier than the oven.

I get crispy sweet potatoes by slicing them thin and round, putting them in the oven pan in a single layer, no overlapping, sparkled with olive oil and salt and turning them halfway. It is definitely more invested than your average oven roasting, but they are good. Also, you have to be careful, because they cook too dry very very quick.

I've been messing with oven baked fries. Best crispy results I've had were pre soaked in water, bake for 30 min at 375, increase temp to 400 and bake until crispy. It's also important to only have a single layer of fries in the pan.

single layer them, increase temperture, and they will crisp up for you. just make sure you ise something on the bottom so hey don't stick. perhaps parchment paper, or an extremely low fat oil like cocoanut oil.

also, if you do decide to use the oil, don't use too much. just dab a bit on the paper towel, and only spread it until there is a very light sheen on it

Thank you so much for all the suggestions. I see I’m not alone in my endeavor 😊 I’m lucky my son loves them even though they come out the way they do. He’ll say- I want orange potato sticks for lunch!

I definitely don’t want add another appliance to my kitchen. Ahhhh, too much clutter! So I will try the convection setting on my oven tonight. Fingers crossed, I read that the results are supposed to be similar to the air fryer!🤞
