@AngelicG, it was 553 calories: 200 of egg, 160 for the cauliflower hash browns, and 160 for coconut oil. Mixed veggies were the rest.

@sugar The recipe is pretty simple: I just scrambled the eggs with chopped bell peppers and spinach, using coconut oil instead of butter to grease the frying pan. As for the cauliflower hash browns, I actually used Green Giant brand, frozen, and then heated in the oven. The last time I tried to make cauliflower hash from scratch was a huge mess, haha. So I “cheated” by using a store bought version. ʅ(◞‿◟)ʃ

I had a bowl of menudo, yestermorn. That's what my dad used to call Breakfast-of-Champions. I reckon' bc after a night of heavy-partying/drinking, Latinos have a humongous hang-over the next day....So, menudo is definitely Breakfast-of-the-champions in that manner. lol Today, I made my other 1/2 maple sausage-links, 3-egg omelet, and waffles. =)
