Happy Birthday to me! I made the most amazing whole wheat lemon ricotta pancakes with fresh blueberry sauce for brunch; my partner went & picked up lattes for us. Ahhhh, relaxing morning, trying a new recipe, just what I planned & truly wanted to do. I ate way too much, but enjoyed each flavor-filled bite.
Actually, lemon lime, as I was short on fresh lemon juice, so I squeezed a lime to complete the recipe; awesome. 1 pancake, no sauce left (of four servings)BIG success. The sauce could have many uses.
Not weighing in for a while. :o) My partner wants to take me out for dinner for my birthday. I also made myself a birthday pineapple frozen yogurt pie in a toasted coconut/coconut butter crust; need I say more?

I think you've already shown restraint for a birthday. I would have made a dessert with much worse ingredients, lol. Enjoy your dinner out. BTW, I love the combo of lemon ricotta and blueberry sauce. I once made a lemon blueberry bread that was yummy too.
