I'm concerned that I am not going to be able to eat enough calories and enough vegetables without going over my allotted amount of net carbs! Any suggestions?

Your menus for yesterday 4/5/2011 looked pretty good and balanced. You had your protein split up between all 3 meals and had a good veggie each meal, as well. It's one of the better-looking days I've seen from someone so new to the program! If you need more calories, you can begin adding butter to your veggies, which ups calories in pretty short order. Careful of the Atkins bars...they can slow or stop weight loss in some individuals sensitive to the sugar alcohols in them. You might want to wait a few weeks to be sure you've got the basic foods and the carb balance going well before adding special low-carb products like those. Without an Atkins bar, you'll have some extra room for foundation veggies. You're off to a good start!
