I sliced a brinjal into 1cm pieces, sprayed the slices with olive oil and sprinkled with some olive & rosemary spices. Popped it in the airfryer at 180 degrees for 8mins, gave it a shake, spray and sprinkle and then put it back in for another 6mins.
The sauce is a mixture of fat free cottage cheese, fresh basil and cherry tomatoes ☺️
