Been craving some peanut butter chocolate lately, but trying so hard to avoid anything with veg/seed oils. So decided to make my own peanut butter cups. It's a bit more effort, but they totally hit the spot 🤎🥜🍫

Ingredients 25g erythritol / xylitol (powdered) 30 g coconut oil 90 peanut butter 30 g cocoa powder Directions 1. Melt coconut oil and mix in cocoa powder and half the sweetener. 2. Spoon about half the chocolate mixture into moulds, push slightly up the sides. 3. Put in freezer to harden (about 15 mins or so) 4. Mix peanut butter with other half of sweetener. 5. Divide sweetened peanut butter evenly into the chocolate moulds, flattening it as much as possible. A wet instrument helps if it's sticky. 6. Spoon the last of the chocolate mixture on the top. Back in the freezer to harden. Note: It actually works better with slightly less chocolate on the top. Keep them stored them in the freezer, as they melt quickly.
