Happy Easter, Passover and Ramadan! It’s just me and the hubs (and the rescue pups) today so we’re going to make a Chicken Tajine for our holiday dinner. I do miss a big family affair, and the traditional Strawberry Easter Cake, but this holiday away from family does present us with the ideal environment to stick to our eating plan even though it’s a celebratory day. It was delicious! We went to Morocco five years ago and I have missed the unctuous, nuanced flavors of tajines. The simmer dried fruit in combination with cumin and chicken: so good! I just had leftovers for dinner. Yum
