I have to bring a vegan vegetable dish to dinner tomorrow night. I was thinking cauliflower sounded good, but I'm open to suggestions. What are some of your favorite recipes?

Vegan curry rice...nom nom (I've been craving curry lately lol)

I do an easy chopped salad with cauliflower, romaine, dried cranberries and toasted sun seeds sprinkled on top. The dressing is mayo, raspberry vinegar and a touch of sugar, not sure what to substitute for the mayo. Course you could always use any type of dressing. though the raspberry vinegar really brings out the flavor, maybe a raspberry vinaigrette.

Texas caviar, a whole bean dip, is one of my personal favorites and doesn't have too much fat either.

I love to make a big bowl of roasted veggies with thyme and rosemary. You can make ahead and serve warm(pop in microwave) or at room temp

It's my sister's birthday and she's having steak but wanted me to bring a bring a vegetable side. She is allergic to milk. Shockingly my family tends not to eat my weird meatless food but there are 14 of us.

Saute cauliflower with onion until tender. Then add cherry tomatoes and a sauce made mostly of water, a little oil (we use butter, but could do it with oil), pepper, and corriander. Cover, reduce heat, and let simmer for a couple minutes. Add toasted almonds just before serving.

Or a nice French bread and a bowl of dipping oil. Olive with thyme oregano, basil, minced garlic, salt and pepper. That's my go to for a bunch of non veggie meat eaters.

love roasted veggies! roasted cauliflower is terrific with fenugreek. Love the bread, making some Italian right now, it's white but I really like a good white bread with chili. I do use a very hard high protein unbleached white flour.

Deb I'm so sorry, I just realized I never answered your question. The dinner went well. I ended up making the Texas caviar suggested by bbrown. I love that stuff.

I roasted cauliflower the other day and made kale chips too. I was amazed at how good they were. Who knew? Put down the candy bar IC.
