My typical omelette or scramble when I have time to cook.
Today I have time to eat only 2 meals. So this is higher calorie and I’ll eat my remaining calories tonight.
2 eggs, sautéed artichoke hearts, sundried tomatoes, Brussels spirits, onions, red bell peppers, vegan cheddar, a little cilantro and leftover taco meat made from lean Turkey.
On top are green onions and avocado

Oh yeah. I didn’t do bread this time. Normally I do lower carb breads along with my eggs. But this time I did whole plain green yogurt with blueberries.
