Diario de Djburney, 13 nov. 12

Day two of Low Carb High Fat experiment. I'm up a teeny bit, but for the amount of calories I ate yesterday, I was afraid I'd be wayyy up. I'm giving it a week, and if there is a gain at the end of the week, I'll resume my low carb low fat method. It was so weird to eat butter and cheese. I haven't eaten that kind of stuff for 8 months! I have to say, it was delicious.

I made some Oopsie Bread. I would really call it more of a bread substitute, it was bread-ish, and could be used for sandwiches, but with no flour, I can't really call it bread. It's made from eggs and cream cheese, sound so healthy, right? My head is having a hard time twisting around the thought that fat is not bad.

In case you haven't read the research on it, three decades ago, it came out that fat and cholesterol in food caused heart disease and weight gain. So recommendations were to eat more grains and less meat and animal fat. But what happened over the past three decades? Americans got fatter and have more heart disease, and diabetes is out of control. So now the research says that carbs are the culprit for disease and obesity. It's true that since I began eating low carb last March, my lipids panel is back in the normal range, my blood sugar is normal, blood pressure better than ever, thyroid function so good that my medication has been cut in half this year.

Now, I have to go fry an egg in butter...

I recommend a book by Gary Taubes called Why we get fat and what to do about it. It definitely made me rethink carbs.

I've read Taubes' several times, and another FS member recommended "The art and science of low carbohydrate living" by Phinney & Volek. I downloaded it and started reading it last night but got too sleepy. As far as Oopsie bread goes, I've got to be somewhat careful with it. It's not the bread that is the problem, but I could go a little crazy with putting butter on it and just eating that all day. Don't want to go back to my old ways.

Don't fret about eating butter ... it's what you put on it that you need to be careful with. Oopsie rolls aren't exactly an 'eat all day kind of thing'. Your fats are to be added to your veggies and meats. Bacon and eggs cooked in the bacon grease... another way to get in your fats. All baked treats (like Oopsie rolls) are just that... a once in a while treat. Concentrate on eating veggies and meats and seasoning with the fats. Cream cheese in sugar free jello is another favorite treat of mine. Good luck!

I'm loving this new WOE too! Did you like the oopsie bread? Was it hard to make? What did you eat with it?

OOP I just read you were eating it with butter. And now I read Mom2's cream cheese/jello thing and DFW was talking about cream cheese/Cocoa. I have to get back to the kitchen. Yum

Sandy, I can see Oopsie rolls as a way to once again eat a tuna sandwich, have some toast with my eggs, etc. I think next time I make them I will stir in a little rosemary. I can see making them just about any flavor, really, since they don't have much flavor of their own. What do you do with cream cheese and jello? Susan, as you can see oopsie bread has a place. It's not really a bread, just "bread like." Sort of. It's not hard to make if you have a little cooking experience. You have to beat the egg whites like meringue and fold them into the other ingredients, gently. By the way, Susan, you look FABULOUS in that picture. I can see why you were a model.
