I LOVE Italian sausage! It should be legal on the Atkins 40, surely? I used to eat that in a chili I made on Weight Watcher's. LOL!

Mom - it is "legal" - I came in under carbs & calories yesterday. But I bought the cheap kind (Johnsonville) which has nitrites in it. Next time I'll spend the extra bucks and get the good stuff AND NOT EAT SO DARN MUCH OF IT!!!

It's hard for me not to eat a lot of the Italian sausage. I am a lover of sausage. Where do you find it with no nitrates? I found Applegate sausages but they are more of a breakfast link. My next plan is to make my own sausage. I found one recipe for a turkey sausage but it wasn't Italian. I might give that one a try first.

The big difference is the spices, the method is the same. Try the turkey one, if it comes out good, you can change the spices.

I will do that! :)

Mom - I am drawing a blank on brand names. You have to read lots of labels so bring your reading glasses. I actually found a brand that said "no preservatives added" but had added nitrates! Guess nitrates are "natural" but not in the amount they put it in! Will get you the info after I go shopping.

I've tried several brand of Italian chicken or turkey sausage. It's all good. Preservative free? Can't say.

I doubt many of them are preservative free. The only kind I find are the Johnsonville but then I shop Walmart. LOL! I will check out that sight nicholaix. Thanks!

Love sausage!! Had to quit eating it until I found a butcher that makes his own, no nitrates added or msg. Then discover Sprouts, they make their own with no chemicals and less salt than my butcher. Had chicken and basil ones a couple weeks ago, so so good

And when they are on sale at Sprouts it's the best price around. Such a great variety, too.

Hey, Mom2, do you have a local butcher? Might be small shop?? I finally found a butcher shop in an old grocery store in the hood that makes his own sausage, some is really good, some very salty to satisfy his clientele. When I lived in the country, St Joe, the closest small city, in the old south end there was a butcher shop, that he made his own, I miss the hams he used to naturally cure for us from neighbor's hogs and the smoked sausage he would make. I'm loving Sprout's more creative selections at the moment, will still go to my butcher in the hood. Please do not be offended by that term, some of my co-workers and friends who grew up in the area call it that. It's had a lot of gang issues over the past 20 years, and is actually improving as the family oriented people in this multi-ethnic area are working hard to improve the area. I love the stores.

To be honest I haven't looked for a butcher shop. LOL! That's a great idea. I will have to inquire at the produce market I found in a town close by. Thanks for that idea.

YW, I've found all kinds of interesting and some not so interesting shops in since, I lost my commuting partner. I really like that freedom.
