Well isn't this fantastic. So we meet again 180's! A better weigh in than I had hoped for. I must be doing something right. Getting closer and closer to my first goal of 170. Learning to juggle school, clinical and weight loss has been quite the experience. A lesson well worth the effort.
Yesterday my son and I got out for a nice long bike ride. It's good quality time together, we ride and chat. He is six, so the topics vary and are never boring lol. Unfortunately a bike ride doesn't give me the steps I wish it would on my fitbit but it sure does boost my activity and calorie burn. I guess some days it's not all about the steps. This upcoming week is the kiddo's last week of summer vacation, I'm going to miss their company. He told me yesterday that he didn't want to go back to school because "I am going to miss our bike rides so much".
I watched the skies last night for some left over meteors from the shower, saw ten in about an hour. Beautiful. Some nights I wish the power would go out everywhere so that I could truly see the night sky, I bet it would be amazing out west.
I also baked some pumpkin spiced zucchini muffins yesterday. I used pumpkin in place of the oil in my zucchini bread recipe and add some pumpkin pie spice. Very yummy. I do this because pumpkin has a lot more to offer nutritionally than veg. oil. Not afraid of the oil. Got to get those vitamins and minerals in my kiddos any way I can. I'm considering doing some double chocolate chip zucchini muffins and using mashed sweet potato in place of the oil then cutting refined sugar down. Nobody ever has to know ;). I love baking. I guess I should start using some whole wheat flour though, I haven't made that transition yet. I'm not sure what the benefit is to whole wheat compared to the white. More fiber I'm assuming?
Anywho, my husband used a vacation day to spend a three day weekend with yours truly. I'm not sure what exactly is on the agenda but it will be something. Hopefully something that requires many steps. Looking forward to whatever today has to bring.

WOW! That is an amazing drop! Congrats! Thanks for the idea of adding pumpkin puree in place of oil. I know you can use applesauce or yogurt/sour cream in place of oil but good idea of using pumpkin puree or sweet potato puree. Have a fantastic weekend with the hubs!

Awesome job :) Oh, I bet its fun riding with your babies. Mine are still to young yet for bike riding, though I am looking forward to the day we do. I live in a town, so when I see the stars I see some scattered on nights, but that is all. I remember in middle school, we went on a homeschooling gathering for fall in the country, I was BLOWN AWAY by the night sky. So beautiful! There truly is no words in the human languages that would do it justice. :)

Clever idea to replace oil with pumpkin; I will definitely have to do that the next time I bake muffins (when the weather cools off).

Great job!! You've been busting your butt, so the loss was inevitable. I'm sure you and your son will find some time for bike rides somewhere once school starts. Even if it's only here and there it's nice to have something that you both enjoy and do together. Just check the labels on your flour. I use unbleached white flour or whole wheat flour if I'm making something not gluten free for the family. I'm going to have to try the pumpkin spice zucchini muffins now! Sounds yummy!!

Thank you everyone!! I decided to 'treat' myself to a delicious skinny cow ice cream sandwich. It was wonderful and I worked it into my daily intake. No harm no foul! Have a great weekend guys :)
