I don't understand. :( I'm hoping it's just water weight or something that keeps me fluctuating. I'm also worried that I'm being too lenient about portion sizes when it comes to things that DO have carbs (like peanut butter and nuts). Do you folks use a food scale at all? What do you recommend?

A food scale is very important. You'll be surprised how off your guessing was. Also, nuts are easy to eat too many. 30g of almonds is 170 cal. That's a scant 1/4 cup or a hand full.

Yes I use a scale also. Mine is digital and can switch between oz and grams. It can also can be zero'd out when you put on a cup or plate, etc. I will try to let you know later the brand. Don't think it was too expensive though.
