For mashed potato cravings this no nonsense mock recipe hits the spot.
Ingredientes

- Empty frozen cauliflower into boiling pot. Allow cauliflower to boil for 30 minutes.
- As it boils, add all ingredients except sour cream to large bowl.
- Once cauliflower is finished boiling, drain as much as possible and transfer to bowl, right on top of the other ingredients.
- Fork mash cauliflower thoroughly until it has a texture of mashed potatoes.
- Lastly, add sour cream which will also help cool it off so you can get started!

I've adjusted the reciepe with garlic powder and after it's all mixed up, I spread shredded sharp cheddar on top, bake in over for about 15 minutes long enough to melt the top. Put it in 1 serving sized containers and have for breakfast... add a saugage link cut up into it :) Mmm-Mmm Good!

I used 16 oz of fresh cauliflower instead of frozen. This recipe was so good that my teen son passed on the mashed potatoes to eat double helpings of this!

I tried this last night and really thought the flavours were delicious and it really did taste like real potatoes! I actually still had some real baked potatoe and scooped this on top! Double yum! I used fresh cauliflower and measured out to 16oz but it wasn't enough for the cheese mixture when using fresh. Next time I will chop up the whole head of cauliflower and possibly double the amount. Thanks for the great recipe!

i make a mashed curry cauliflower which is good but it tastes like cauliflower. this really tastes like potatoes. even fooled a friend!! delicious!!!!!!! thanks for sharing

SOOO yummy! Even my kids loved it! I used fresh cauliflower because I didn't have any frozen, added garlic powder salt and pepper to taste....mmmmmmmm! I would really recommend it to go with any meat you would think to serve mashed potatoes with, it's a great low-carb substitute!

I used fresh cauliflower--and not enough, I wanted to save some for later, so it was a little thin. I popped it in an oven-safe dish and baked it for about 20 minutes. Great with my Spring Break Turkey dinner. I didn't even consider tasting the mashed potatoes I made for my guys! Thanks!
